Duck Breasts With Peaches

Ingredients (5 servings) 3 tbsp. Olive oil 3 Medium-size firm mushrooms 5 Half breasts of duck, boned 2 tbsp. Grated orange rind 1/4 cup Orange juice 1 cup pureed Peaches 1/2 cup Heavy cream, whipped 1/2 tsp. Garlic powder 1 cup Chicken stock 1 tbsp. Honey 1 tsp. Guava or red currant jelly Saute mushrooms in oil. Stir over low heat for 5 minutes. Remove mushrooms and set aside. Then, lightly brown the duck breasts on both sides and remove from pan. Do not overcook. Reduce heat to low and add 1 tbsp. butter, garlic powder, orange rind, mushrooms, orange juice, chicken stock and honey, peach puree and jelly. Stir over moderate heat until mixture begins to boil. Place breasts in pot and coat with sauce. Cook over low heat about 20 minutes or until done. Arrange breasts on a serving platter or gratin dish. Whip cream and add it to the sauce and spoon the mix over the breasts. This Makes 5 servings.More Easy Recipe Sites
