Duck Breasts with Parmesan Cheese

2 duck breasts, boned and sliced
1/4 cup parmesan cheese
1 beaten egg mixed with 1 tsp. water
1 cup olive oil

Heat oil in heavy skillet. Dip pieces of duck breast in beaten egg and roll in Parmesan cheese, then saute breasts in hot oil.
